Chicken Creole Recipe

INGREDIENTS:

  • 4 chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 cup diced celery
  • 1 14 ounce can diced tomatoes
  • 1 6 ounce can tomato paste
  • 1/2 cup chicken broth
  • 1 teaspoon minced garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

INSTRUCTIONS:

  1. Heat the olive oil in a pan on the stovetop.
  2. Add the chicken. Cook for about 5-7 minutes or until the chicken is no longer pink.
  3. Add the peppers, celery and onion. Cook until tender.
  4. Stir in the minced garlic, tomatoes, tomato paste, broth and the seasonings.
  5. Bring to a boil. Reduce heat. Cover and simmer for about 5 minutes.
