Chicken Creole Recipe
INGREDIENTS:
- 4 chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1 onion, diced
- 1 green pepper, diced
- 1 cup diced celery
- 1 14 ounce can diced tomatoes
- 1 6 ounce can tomato paste
- 1/2 cup chicken broth
- 1 teaspoon minced garlic
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1/2 teaspoon marjoram
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
INSTRUCTIONS:
- Heat the olive oil in a pan on the stovetop.
- Add the chicken. Cook for about 5-7 minutes or until the chicken is no longer pink.
- Add the peppers, celery and onion. Cook until tender.
- Stir in the minced garlic, tomatoes, tomato paste, broth and the seasonings.
- Bring to a boil. Reduce heat. Cover and simmer for about 5 minutes.
