- Combine the cream cheese, sour cream, vanilla extract, lemon juice and powdered sugar into the bowl of a stand mixer and mix well. Mix until completely smooth with no clumps.
- Fold in the cool whip.
- Pour the cheesecake mixture into a prepared crust in a 9-inch springform pan.
- Cover with plastic wrap.
- Refrigerate overnight.
