Mexican Street Corn
INGREDIENTS:
- 4 ears of corn
- 1/4 cup Mexican sour cream
- 1/4 cup mayonnaise
- 1/2 cup Cotija cheese
- 2 teaspoons minced garlic
- juice of 1 lime
- 1/4 cilantro
- 1/2 teaspoon chili powder
INSTRUCTIONS:
- Preheat your grill or oven to 400 degrees.
- Remove the husks from the corn. Spray each cob with butter. Grill the corn for about 10 minutes or bake the corn for about 25 minutes or until done.
- Mix together the sour cream. mayonnaise, cotija cheese, garlic, lime juice and cilantro. Top each corn cob with the sauce.
- Sprinkle with chili powder.
- Top with additional cotija cheese and cilantro.
