These avocado egg rolls are absolutely delicious! They make a perfect appetizer for game day or any day! This recipe includes 3 different ways to cook these yummy egg rolls; fry them, air fry or bake them! They’re amazing any way you cook them!

Avocado Egg Rolls
INGREDIENTS:
- 8 Egg Rolls Wrappers
- 5 Avocados
- 1 Tomato, Diced
- 1/4 Cup Red Onion, Diced
- 3 Tablespoons Cilantro
- 1 Teaspoon Garlic Powder
- Salt
- Pepper
- Juice of 1 Lime
- Cooking Oil
FRYING INSTRUCTIONS:
- In a mixing bowl, mash the avocados.
- Add the tomato, onion, cilantro, garlic powder, salt, pepper and lime juice. Mix well.
- Heat the cooking oil in a pan on the stovetop.
- Lay out the egg roll wrappers.
- Add 3 tablespoons of the avocado mixture to each egg roll wrapper.
- Fold in the sides and roll up the egg roll.
- Fry the egg rolls for 2-3 minutes on each side, until golden brown.
- Remove from the pan and place on paper towels to drain the excess cooking oil.


AIR FRYER INSTRUCTIONS:
- In a mixing bowl, mash the avocados.
- Add the tomato, onion, cilantro, garlic powder, salt, pepper and lime juice. Mix well.
- Lay out the egg roll wrappers.
- Add 3 tablespoons of the avocado mixture to each egg roll wrapper.
- Roll up the egg rolls.
- Coat the egg rolls with cooking oil.
- Place the egg rolls on an air fryer basket.
- Set the air fryer to 375 degrees and cook for about 10 minutes, flipping once halfway through.

OVEN INSTRUCTIONS:
- Preheat the oven to 400 degrees.
- Line a baking sheet with foil and spray with cooking oil. Set aside.
- In a mixing bowl, mash the avocados.
- Add the tomato, onion, cilantro, garlic powder, salt, pepper and lime juice. Mix well.
- Lay out the egg roll wrappers.
- Add 3 tablespoons of the avocado mixture to each wrapper.
- Roll up the egg rolls.
- Coat the egg rolls with cooking oil.
- Line the egg rolls in a single layer on the prepared baking sheet.
- Cook for about 20 minutes, flipping once halfway through.
