Cornbread Taco Bake
INGREDIENTS:
- 1 pound ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1 can diced tomatoes
- 1 can green chiles
- 1 can black beans, drained and rinsed
- 1 box cornbread
- 1 cup shredded cheddar cheese

INSTRUCTIONS:
- Preheat the oven to 400 degrees.
- In a large pan, cook the ground beef over medium heat until no longer pink. Drain.
- Add the water and seasoning to the ground beef. Continue cooking for 5 minutes.
- Mix in the diced tomatoes, green chiles, black beans and 1/2 cup of cheese.
- Spoon the mixture into an 8×8 baking dish.
- Prepare the cornbread according to the package directions. Pour the cornbread mixture over the ground beef mixture.
- Bake for about 20 minutes.
- Sprinkle with the remaining cheese.
- Bake for about 5 minutes or until the cheese is melted.
