Chocolate Bacon Cupcakes
INGREDIENTS:
- 1 cup flour
- 1 cup sugar
- 4 tablespoons cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup olive oil
- 1/2 cup buttermilk
- 1/2 cup hot water
- chocolate buttercream frosting
- bacon, cooked and crumbled
INSTRUCTIONS:
- Preheat the oven to 350 degrees.
- Line a cupcake pan with cupcake liners. Set aside.
- Combine the flour, sugar, cocoa powder, baking soda and salt to a mixing bowl.
- In another bowl, combine the egg, olive oil and buttermilk.
- Pour the bowl of wet ingredients into the dry ingredients and mix well until smooth.
- Mix in the water.
- Fill the cupcake liners about three-fourths full.
- Bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool.
- Frost the cupcakes with chocolate buttercream frosting. I use this recipe for the frosting.
- Top with crumbled bacon.
