Monterey Chicken
INGREDIENTS:
- 2 boneless skinless chicken breasts
- 1 cup shredded cheddar jack cheese
- 6 pieces bacon, cooked and crumbled
- 1/2 cup cherry tomatoes, diced
- 1 tablespoon green onions
- 1/4 cup barbecue sauce
- salt
- pepper
- 2 tablespoons cooking oil

INSTRUCTIONS:
- Preheat the oven to 400.
- In a large skillet, add the cooking oil and chicken. Season the chicken with salt and pepper. Cook the chicken on medium heat until done, flipping once.
- Place the chicken in a baking dish. Coat the chicken with barbecue sauce. Sprinkle with the shredded cheese. Top with the bacon, tomatoes and green onions.
- Place the chicken in the oven and cook for about 10 minutes or until the cheese is melted.
